Green Eggs and Ham Quiche

I’m more of a traditionalist when it comes to Dr. Seuss.  I enjoy the classic cartoon renditions of the books much more than the recent remakes.  With that being said, my favorite Seuss Scroll is Green Eggs and Ham.  I think it was the aliteration about eating it with a fox that I could identify with. 🙂

A couple of suggestions with this…it works good hot or cold, fresh or leftover.  The key here is the size baking dish you use.  It works best with the 9 X 13 because it bakes with better consistency (all the way through).  I like it with a dollop of sour cream and a bit of ketchup, but Erin likes it sans condiments.

This is one of the easiest and quick throw together recipes around, and it’s soooo good!  The prep time is right around 15 minutes.

INGREDIENTS:

2 cups chopped fresh spinach
1 sweet onion, chopped
4 eggs
2 cups milk
1 1/2 cup baking mix (such as Bisquick or Krusteaz)
1-2 cups chopped ham (amount based on preference)
2 cups shredded Cheddar cheese

DIRECTIONS:

  1. Preheat an oven to 325 degrees. Coat the bottom of a 9×13 inch pan with cooking spray.
  2. Combine spinach and onion in the bowl of a food processor. Process to finely chop.
  3. Add eggs, milk, and baking mix; process to mix. Pour mixture into prepared pan.
  4. Sprinkle ham and cheese over the top.
  5. Bake in preheated oven for 40 to 50 minutes. Quiche is done when toothpick inserted in the center comes out clean.
